iShowU HD and HD Pro from Shinywhitebox is a very good video capture utility for the Mac. It allows you to record your screen in real-time. What does this mean? Well, other tools require that you encode the video capture after you record your screen and before it can be distributed to anyone - shared. iShowU HD and HD Pro do the video encoding on-the-fly as you record so that when you're done recording your video, you have a .MOV file that you can distribute immediately.
I downloaded this application and gave it a try. Just using the default settings it was a snap to use and did a very good job recording the screen. Video quality and motion was excellent.
If you do any sort of computer training, this application is a must. I also tested it running Windows XP via Parallels and was able to record Windows as well, within Mac OS X, making this a good training tool for either platform when running in parallel.
